Cinnamon Butternut Squash with Eggs


  • kämen Extra Virgin Avocado Oil
  • Butternut squash
  • Salt
  • Cinnamon
  • Nutmeg
  • 2 eggs
  • Fruit to garnish (I used a strawberry)


Cook two eggs in kämen Extra Virgin Avocado Oil stovetop on medium heat

Peel a butternut squash and chop into cubes

Toss cubes into a ziplock bag along with kämen Extra Virgin Avocado Oil, a dash of salt, cinnamon and nutmeg.

Shake ingredients

Put contents of ziplock on parchment paper on a baking sheet and bake at 375°F for about 40 minutes

Garnish plate with desired fruit and enjoy!
